Introduction

This is a delicate spice combination creating the most amazing and comforting potato side dish which can also be served as a main course. There is no one way to make this mix and each and every traditional household has their own unique recipe.

Steps

  • Step 1 - Boil Potatoes

  • Step 2 - Prepare ingredients

  • Step 3 - Cook Dish

Method

1. Heat a pan on medium heat, add vegetable oil 


2. When oil is hot, add mustard seeds, heat until the seeds start popping 


3. Add cumin seeds, curry leaves and chilli's, sauté for 1 minute 


4. On medium high heat, add the onion, cook for 3 minutes 


5. On low heat, add garlic, relish bombay potato spice mix,

    cook for 1 minute 


6. Add tomatoes, cook the mixture until tomatoes are soft

    (approx. 5 minutes) 


7. Add water, salt and stir


8. Add pre boiled potatoes 


9. Add coriander, mint 


10. Check for seasoning, add butter, cook until sauce thickens

Ingredients

800g/6 Potatoes (boiled with skin on) (then pealed and, 5cm or 2" cubed)

3 tbsp Vegetable Oil

1 tsp Mustard Seeds

1 tsp Cumin Seeds

8 Curry Leaves

2 Whole Dried Kashmiri Red Chilli's

1 Large Onion Sliced (thinly)

4 Garlic Cloves (crushed)

2 ½ tsp Relish Spice Mix (soaked in 100 ml cold water)

2 Fresh Medium Tomatoes (sliced) or 4 tbsp Tin Chopped Tomatoes

Hand Full - Fresh Coriander Leaves (chopped)

4 Mint Leaves (torn)

Salt to Taste

Knob of Butter
