Introduction

A most common curry prepared in most Goan homes. Relish Spice Xacuti Mix is a combination of traditional recipes from Tiswadi (Panjim) and Bicholim, which has ultimately originated from Portugal and changed over time. The roasted coconut and the use of aromatic blend of spices make this dis tasty, light and very healthy curry.

Method

Preparation


300g carrots/ french beans/ cauliflower florets

(parboiled with pinch of salt)

125g of paneer cubes

(grilled on a pan soaked in water)



Xacuti Curry


1. Heat a cooking pan on medium heat, add oil


2. Add onions, sauté until they turn a light golden brown


3. On high heat, add tomato and fry for 5 minutes


4. Add the ground coconut paste, mix well


5. Add water for consistency add parboiled vegetables salt,  

    cover and cook for 5 minutes on high heat. Add paneer       

    and simmer for 1 more minutes


6. Check for seasoning, add fresh coriander, mix, serve and 

    enjoy


(recommended - serve with basmati rice)

Ingredients

Base Curry Paste


1 Onion Sliced (fine)

2 tsp (heaped) Relish Xacuti Spice Mix

1 tbsp (heaped) Relish Xacuti Coconut Mix

½ tsp Tamarind Paste or (1 tsp Lime Juice)

1 Green Chili (optional)

1 tsp Ginger Paste or 1" - 1 ½" Fresh Ginger Chopped (fine)

1 tsp Garlic Paste or 1 - 2 Fresh Garlic Cloves (crushed)

100g Grated Coconut


(blend the above ingredients into a paste)


Xacuti Curry


½ Medium Onion Diced (fine)

½ Tomato Diced (fine)

Salt to Taste

Fresh Coriander Leaves to Garnish
