Introduction

Lamb chops is the favourite for Indians to grill on a pan or in Tandoor, with Nawabi

Steps

Method

MARINADE


1. Add ginger, garlic, vinegar and mix thoroughly


2. Add rest of the ingredients except salt

along with the yoghurt and spice mix it well


3. Place the chops in an air tight container

or cover with cling wrap


4. Keep in the fridge marinate at least 6 hours.


(remove the marinated chops out of the

fridge add salt and marinate until chops

comes down to room temperature


GRILL


1. Medium heat a thick bottomed flat pan or a griddle add ghee


2. Place lamb chops on a pan and grill each side for 5 minutes


3. Rest the lamb chops for five minutes, prepare baste from

collecting the juice from the chops mix with left over marinade and ghee/ butter


4. Baste the lamb chops and pre heat the grill on high heat


5. Transfer the chops in to a tray and grill for 5 more minutes (until the edges starts to char)


Serve with Green Chutney, Onion

kachumber and wedge of lime

Ingredients

1kg/ 8 Lamb Rib Chops : Wash, drain and pat dry lamb chops. Gently flatten with a steak hammer to tenderise.


MARINADE


Lamb Chops

1 ½ tbsp Ginger Paste

1 tbsp Garlic Paste

30 ml Malt Vinegar

125ml Yoghurt (place in a cheese cloth tie

a knot and hang it to drain whey for 30 minutes)

3 tsp Relish Nawabi Lamb Spice Mix

1 tsp Chilli Powder or 1 tsp Green Chilli Paste

Handful Coriander Leaves (finely chopped)

2 tbsp Mustard Oil / Vegetable Oil

2 tbsp of Lime Juice

¾ tbsp salt (to taste)


GRILL


2 tbsp Ghee


BASTING


2 tbsp Ghee/ Butter (melted)

Left over marinade Mix it together
